Arugula-Radish Salad:
Leafy greens are one of my “not-so-secret” secret weapons! Arugula is possibly my favorite bitter green, but there is such a variety of leafy greens to choose from such as Swiss chard, kale, watercress, spinach, bok choy, cabbage, and more!
Here’s an impressive list of known benefits of consuming leafy greens:

• improves energy
• reduces the effects of stress
• boosts performance levels
• aids weight loss
• rich in minerals such as calcium and iron to keep us strong
• good B vitamins that are key for our mental health
• fiber to naturally detoxify our bodies
• rich in antioxidant vitamins and phytochemicals that keep our immune systems firing
There are lots of ways to prepare leafy greens besides a salad. You can sauté, stir-fry, blanch, grill, bake, blend or eat them raw.
• 1 bunch of radishes
• 5 oz pkg baby arugula
• 4 tsp extra virgin olive oil
• 2 tsp white wine vinegar
• 1 tsp Dijon mustard
• 1/4 tsp sea salt
• 1/8 tsp black pepper
1. Place oil, vinegar, Dijon, salt, and pepper in a medium bowl; whisk to combine the dressing.
2. Trim and thinly slice radishes; add to the bowl with the dressing and let marinate for 30 minutes if time allows.
3. Right before serving, add arugula to the bowl with the dressing and radish; toss to combine the salad.
